ROASTED ASPARAGUS

Asparagus is rich in folate, also known as vitamin B-9. We know this nutrient plays an essential role in cell development, especially while pregnant. But did you know that the family of B vitamins has also been linked to decreasing the severity of depression?

Homocysteine is an amino acid that can block blood and nutrients from reaching the brain, which stops the production of feel-good hormones like serotonin, dopamine, and norepinephrine. And Folate prevents too much homocysteine from forming in the body. Therefore, this powerful nutrient can improve your mood!

INGREDIENTS

  • 1 large bunch of fresh asparagus
  • 1 tsp oil of your choice
  • 1/2 lemon, juiced
  • Salt & pepper to taste

DIRECTIONS

Preheat the oven to 425 degrees and line a baking sheet with parchment paper. Cut and discard the woody ends of the asparagus. Spread the asparagus on the baking sheet and drizzle with oil. Bake for 12-15 minutes, depending on the thickness of the asparagus stalks. Remove from oven & squeeze the lemon juice on top of the stalks. Salt and pepper to taste.
